Sesame Sriracha Noodles


I love cold salads and sandwiches, but sometimes lunch needs to be a little more exciting.

Super Saturday Sesame Noodles

Ingredients:
16 oz of noodles, preferably linguini but any noodle works
1/4 cup peanut butter
1/8 cup tahini
1/8 cup rice vinegar
1/4 cup tamari or soy sauce
2-3 tablespoons minced garlic
1 teaspoon sriracha
2 tablespoons peeled and grated ginger

5 or so green onions, sliced
Sesame seeds
Red pepper flakes


In a large pot, boil water and prepare the noodles according to package directions.  Drain, rinse with cold water, and let sit in the refrigerator.

In a medium saucepan, heat peanut butter and tahini on low to medium heat until melted and creamy. Turn off heat and immediately whisk in vinegar, tamari, garlic, sriracha, and ginger until blended.

Pour dressing onto noodles, and mix well.  Fold in green onions.

Top with sesame seeds, red pepper flakes (as many as you want), and green onions.  Garnish with drops of sriracha, if you're trying to impress someone at a fancy dinner party, or if it's Saturday and you're on your couch in your sweatpants, just dump it on.  I won't tell anyone.
